Recipe: Cheesy Cream of Broccoli Soup with Bacon

Oh my heck!! I made this soup last night and it is the best soup I have ever made by far. Like, by souper far ;) Easy to make  (awesome!), healthy (bonus!), and so delicious (why I really love it). It is creamy with just a little kick and who can say no to bacon!?!?

The best news is...Talon likes it! He ate broccoli!!

I don't have an emersion blender so I just cut everything really small. The next time I make this soup, I will crisp the bacon a little more. Also, I just used regular ingredients, nothing fancy.

  • 1/2 lb. of nitrate-free bacon, chopped
  • 4 c broccoli, diced
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 1 T parsley
  • 1/8 t cayenne powder
  • 4 c chicken bone broth
  • 1 c heavy cream
  • 1 c milk
  • 3 T butter
  • 3 T arrowroot powder, or flour
  • 1/4 c grated parmesan cheese
  • 1/4 c cheddar cheese, cubed
  • sea salt and pepper, to taste

  1. I made this soup for a big family gathering and it was a big hit! I think I might have to make it again, because there weren't any leftovers, and I'm wanting more. Thanks for the recipe!
