Book Review: Fair Catch

I vividly remember sitting on the floor, surrounded by piles of laundry waiting to be folded, kids napping, and me reading this book for 2 hours straight.

**** 4/5 stars! Couldn't put this one down!! Ellie, a divorced single mother, gets a new neighbor, Nick, a very eligible bachelor and retired NFL quarterback. Sparks fly, but can they really make it work?

This was a good book! It was nice and clean which was nice. I usually stay away from romance books because of sexual content so this was a pleasure to read. I liked the bit of suspense towards the end of the book when I thought the conflict was over. It kept me engaged and interested. I liked that the story didn't end where a lot of other stories would have but that it continued on and provided closure. I loved the happy ending!! I love happy endings and when good guys win so this book was perfect for me. I will be recommending this book to all of my friends and family!

Recipe: Cheesy Tuna Bites

I stumbled upon these Monday when we were out of bread but my son wanted a fried tuna sandwich. So good. So easy.


 

Cheesy Tuna Bites

1 can tuna
1 good squeeze mustard
1ish Tablespoon pickle relish
1 big spoonful mayo
1 handful shredded cheese
1 boxTriscuits

Preheat oven to 350. Drain tuna. Put mustard, relish, and mayo in bowl then mix in the tuna. (I put the mayo in first then use that spoon to get the tuna out of the can. Saves a spoon or tuna from getting in the mayo.) Mix in cheese. Lay out Triscuits on a baking sheet (maybe I used 15-20???). Top with tuna mixture. Bake until cheese melts, about 5ish mins. Makes enough for one adult and one child to have for lunch but still want more because they are so good...better double it.  ;)

Chocolate!!!!!


Why yes, that is 37 pounds of chocolate chips and 5 pounds of cocoa. Baking is definitly in my future, delicious recipes are in yours. Stay tuned.

My Husband Sure Loves This Beech

I love writing this blog!! It makes me happy sharing my random stories, recipes, book reviews, and other stuff with you all. I enjoy it and hope you also enjoy it...despite my less than average writing skills.

I have been completely blown away by how supportive my husband has been with me spending time working on this blog. He has been so happy for my blogging bliss. :)  He is a really good guy so we shouldn't be surprised, but still, awesome. 

Sunday night, my awesome husband suggested that I give a Jacob of Avondale book away to one of my awesome blog readers (I had already decided to purchase 3 so it will be one of those). So, from my husband to you, good luck!

Chicken Scratch

I wrote my letter. I wrote it to my grandmother. I hope she appreciates it. 

I now remember why everyone stopped writing letters-it's no good.

1. I have horrendous handwriting. Like, seriously bad. My handwriting has been made fun of on so many occasions that it's ridiculous. 

2. Finding the time to sit down and write on paper was not happening. Ain't nobody got time for that. 

3. What does one say in a letter? I rambled on about random stuff. I told my grandma about this blog. Do grandmas even know what blogs are?

4. No spellcheck. How did people exist before spellcheck??? Even if my grandma can get past the handwriting, I'm afraid she still won't know what I'm trying to say.

I think we all know how I feel about email, text, Facebook, and Instagram-AWESOME!

It was kind of fun to write a letter and maybe I will do it again. It did, after all, give me an excuse to use the stationary I got about 20 years ago.

Interview:
A big Thank You to Craig for being so awesome as to do an interview for us (me)!! I think you all should join with me in asking him to write another book...or two or three.  :)   -Love the poem to his sis!

Are you going to write more books? OR What should we expect next from you?
I’ve been asked this question a number of times from people who have read my book.  Some have asked for a sequel, but most have wanted me to write a prequel.  I guess there are some who want to know who set up the adventure upon which Jacob embarks.
At this time, I don’t have anything in the works.  Jacob of Avondale took me nearly 5 years to complete and I felt like I had homework hanging over my head the whole time.  Everytime I sat down to read a book, I felt like I should be working on my own instead.  That, and the fact that I have a regular job and a busy family life, rules out any immediate plans for another book. Maybe sometime in the future I will reconsider.

What inspired you to start writing generally?
My oldest daughter, who is turning 16 years old in a couple of weeks (yikes!), was my impetus for the book.  She went through a stage in her earlier years where she had a lot of “school anxiety.”  She’s very intelligent, and has always loved reading, but we had a difficult time getting her to go to school in the morning.  She would actually become physically ill because of her worries.  One morning I made a deal with her that if she went to school, I would write a chapter or two of the book that I had in my head (see question 1 from Becky below).  She went and I wrote.  Hours later she came running home from the bus stop, swung open the door, dropped her backpack on the floor and stuck out her hands.  I placed the stack of papers on top of her precious little palms and she turned and ran up the stairs to her room.  A short time later she returned to the kitchen, handed me the pages and asked, “What happens next?”

Did anything help with the writing process? (Music, treats, or anything else)
I couldn’t write at all if there was any noise in the house - especially piano practicing.  Most of the time I had to be alone in the home or at least have my noise canceling headphones over my ears.  I also found that I needed to turn off my email, phone, etc. because if a single interruption pulled me out of the time period that I was writing in, it took me a while to get back into the Avondale mindset.

Were any of the characters or places modeled after real people or places?
That’s a good question!  The kingdom was completely in my head, and I can still picture the places, rivers, trees, and overall layout just as I imagined it while writing.  There was one character that was modeled after a real person.  My great, great grandfather’s name was Ossian Leonidas Packer.  I used his first name and described him from an old black and white photo that we have of him.  Although, I added the part about his bushy eyebrows being “dangerously close to touching in the middle”.

What is your dream job or life?
Well, I wish I would have had the opportunity to make money playing basketball, but since the Utah Jazz never knocked on my door, I had to get a real job.  I’ve been practicing dentistry for over 13 years now.  As far as a dream life goes, I would love to have a secluded home and small ranch tucked up against a river that is loaded with hungry trout.  I guess Raoul isn’t the only one around here that is a bit of a recluse.

Questions from Becky:
Where did you get the idea for this book?
Apparently this is a common answer from authors who are asked this question, but it came from a very vivid dream that I had.  I dreamt that a young man had found a secret room in an old, ornate castle.  He saw on a shelf an old, white human skull.  In my dream he rushed to the skull and after picking it up, threw it to the ground.  When it broke into hundreds of pieces he found a bunch of magical figurines among the bony shards.  That’s when I woke up.

What inspires your ideas?
I’m not sure exactly how to answer this one.  I’ve always been an avid reader and especially loved books by Lloyd Alexander, Susan Cooper, C.S. Lewis, and of course J.R. R.Tolkien.  I guess when it came time to try my own hand at writing, I was already used to living in fictitious lands and with make believe people.  I also grew up being intrigued with superheroes and their amazing abilities so Jacob’s character was especially fun for me to create.

How long did it take for you to find a publisher? Did you have to send it out to a ton of publishers or did the first one take you?
I kind of took the quick route to getting published.  I sent it to a local publishing company and was not accepted.  As I then studied the process and learned about agents, New York based publishers, etc., I realized that I didn’t have the time or desire to spend a lot of effort doing things the traditional route and started looking into self publishing through internet companies.  Just as I was about to do that, I heard about a company who likes to publish from first time authors.  After submitting my book, they called with a contract offer and I accepted.  They claim an acceptance rate of less than 10% but I’m skeptical.  There are some marketing fees that they require, and at times I wish I would have held out and tried harder to use a mainstream publisher.

Question from Ann:
What is your writing process? Does the story just come or do you start with an outline? What about the land and maps?
For me, it was very important to have an outline.  I would at times go many months without writing a single sentence and so I needed to be able to just read the last couple of pages and start right where I left off.  I also drew a rough map of Avondale and of the castle so I could be consistent as I moved the characters around from place to place.  After the book was completed, my amazing wife (who graduated from college with an art degree) took over and turned my rough sketches into the works of art that they are now.

Question from Emily:
What is it like to have the coolest sister ever?
Wow, where do I even begin?  Maybe with a poem that I wrote when I was only 12 or 13.
“I have a little sister she’s as cute as she can be,
And every time I smile at her she smiles back at me.
I couldn’t live without her  . . . I wouldn’t stand a chance.
If I tried to live without her I’d be as miserable as can be.
I just don’t know what I would do without my little Emily.”

Beech Boys

We sing the Thomas the Tank Engine song as a lullaby at our house. "They're two, they're four, they're six, they're eight...." I can sing the whole song from memory. When Baby Archer cries, Talon rushes over to him and will start singing it. It calms Archer right down. 

Talon has a million Cars stickers. He puts a bunch on his arms but then they fall off all around the house. Cars stickers everywhere! On the carpet, in my bed, I find them stuck to the bottom of my feet while I'm showering, on the baby, and Mark even got made fun of by the guys at work for having one stuck on the back of his pants. Seriously people, everywhere!!!!

I brought a fun size Take 5 candy bar to church today. I pulled it out and took a bite then turned to Mark and Talon to hassle them. I said, "Sneakies," smugly to them and went to take another bite. The next thing I knew, Talon had grabbed the candy bar out of the wrapper, said, "Sneakies," back to me and popped it in his mouth lightning fast. Lol! That stinker knows how to survive at the Beech house. (Luckily, I had brought two Take 5's so I still got the other one.)

We're All A Bit Witchy

I turned on Kiki's Delivery Service for Talon and tried to get a little sleep today. Per the usual, my mind started going 100mi/hr instead of sleeping. One thing that I pondered was, If I were a witch, what job would I do? Which led to, Which witch ability would I have?


Kiki flys and has a delivery service. Kiki's mom is a herbalist and seems to make medicines. Another girl is something like a love fortune teller. 

So here are my questions for you, what witch ability would you pick to have and what would you do with that ability?

Someone Is Going To Feel Like They've Won A Prize!!

Hey, peeps. I'm challenging myself and all of you to write one letter this week. I get so many adds and bills and junk that when I get any real mail, (baby shower invite, birthday card, wedding announcement, and the like) it feels like I've won a a prize! I get so excited that the real mail gets hung up on the fridge!!! ;)

I think I am going to write to my grandma for this challenge. You can pick whoever you want. I will probably write some random stuff and maybe a memory. Knowing myself, I will probably draw some random pictures as well. If I get super ambitious, I will have Talon dictate a message for me to write and have him color a picture as well. The real challenge will be to actually get it mailed off. I'm sure we have envelops and stamps somewhere....

Recipe: Cheesy Cream of Broccoli Soup with Bacon

Oh my heck!! I made this soup last night and it is the best soup I have ever made by far. Like, by souper far ;) Easy to make  (awesome!), healthy (bonus!), and so delicious (why I really love it). It is creamy with just a little kick and who can say no to bacon!?!?

The best news is...Talon likes it! He ate broccoli!!

I don't have an emersion blender so I just cut everything really small. The next time I make this soup, I will crisp the bacon a little more. Also, I just used regular ingredients, nothing fancy.

  • 1/2 lb. of nitrate-free bacon, chopped
  • 4 c broccoli, diced
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 1 T parsley
  • 1/8 t cayenne powder
  • 4 c chicken bone broth
  • 1 c heavy cream
  • 1 c milk
  • 3 T butter
  • 3 T arrowroot powder, or flour
  • 1/4 c grated parmesan cheese
  • 1/4 c cheddar cheese, cubed
  • sea salt and pepper, to taste

Book Review: Jacob of Avondale

Hey, blog followers! Here is the extended review that I promised you.

Jacob of Avondale

***** 5/5 stars! This is a very fun, uplifting adventure book with just a touch of romance. It is set in a castle with the frivolous, gaudy, and power hungry King and Queen and their unexpectedly kind and down to earth daughter, Catherine. Jacob is an orphan servant in the castle who likes excitement but knows when to keep his head down. It all starts with Jacob seeing something he wasn't supposed to see, something that will change his life forever.

As the adventure begins and then throughout Jacob's quest, we encounter some magic that moves the story along without the magic taking over the story. The real story is about kindness, strength of character, and the importance of friends and family.

We see Jacob and his friends learn and grow throughout their journey while loving and supporting each other. We see all of the characters in the book be given opportunities to choose between right and wrong and how those choices effect those around them.

I love happy endings, I love when the good guys win, and I LOVE THIS BOOK!

This book would be great for readers about 10ish up and would be a super fun book to read as a family with only one warning, I had a hard time putting it down!!!

I really liked this book!! It was mostly adventure with a bit of romance. A fun read that I had a hard time putting down. It is a young adult book probably good for 10ish up. It is clean with no bad language. Could be a fun bedtime book with the whole family!!


I'm Only Kind Of A Negative Beech

Results of my no complaining challenge:

I think that I did awesome!! I'm fairly certain that I have been pretty darn positive all week long. I asked my husband how he thought I did, "You are perfect in every way," was his answer. Apparently I didn't do as well as I thought. :/  The good news is, my husband knows the right way to answer my questions. ;)

Over Rated


Before today it had been two weeks since I had shaved my legs. I am okay with that, even while wearing capri pants and shorts. I think these feelings come from a combination of me getting older and lazier along with being a lot more busy mixed in with my general dislike of shaving. 

Moral of this story: If you see me with unshaven legs, don't be surprised or alarmed and know that my dislike of shaving far exceeds my embarrassment and self consciousness.

Some of you may remember that I read this book a little while ago and really,really liked it. Well, I have been emailing with the author, Craig Packer, and he has agreed to give me an interview!! I am super excited about this and literally had butterflies in my stomach when I received his acquiescence!!! :D

Book Review: Ephesians

The Epistle of Paul the Apostle to the Ephesians

***** 5/5 stars! This is a wonderful book full of a lot of great insight and instruction. I have about half of the book highlighted with notes inserted throughout because of all the great stuff in there.

This book is a super quick read. It took me six days initially (one chapter a day, cuz that's how I roll) but when I reread it it really only took about an hour, and that was with my kids bugging me all throughout. 

I love this book and highly recommend it. It it pleasant, uplifting, and I was able to understand and follow along (which was nice after muddling through the Corinthians and Galatians). Give it a read!!!

Recipe: Chocolate Frosting

Am I the only one who only either buys store bought cakes or a container of frosting to go on my box mix cake? Oh, well that's embarrassing. ;) Either way, this chocolate frosting recipe was kind of a life changing event for me. For realsies.

It all started when I picked to bring dessert to my mom's house for lunch this past Sunday. Watching LDS General Conference all day Saturday made it hard for my lazy self to make something. At about 10pm Sat night, I was feeling super excited that I still had a box of yellow cake in my cupboard since I've been trying (and mostly failing) to keep processed foods out of my diet.

Sunday morning we went to my dad's house for breakfast and then were scheduled to be to my mom's house for lunch (It seems like my parents always schedule things on the same day. Divorce kids problems :). So on the way home from my dad's house I googled chocolate frosting recipes. I pulled this one up and saw that I had all the ingredients. Awesome! 

When we got home the first thing I did was run to the fridge, pull out two sticks of butter, and put them under my armpits. Ain't nobody got time for letting butter soften on it's own. With the butter warming under my arms, I pulled out the other ingredients and the mixer. By then the butter was feeling fairly soft, soft enough that a high speed beater was able to whip it into complete softness with only a few bent beater tongs. (I was able to bend the beater back into shape. No need to stress over my beater ;) 

Talon kept begging for a bite so when it was just butter and cocoa I gave him a little piece. Hilarious!! Funniest thing that has happened in a while. :D  Once I got it all mixed up, Talon kept asking for tastes and probably would have eaten the whole bowl by himself, but would have had to fight Mark over it since they both kept 'tasting' it. 

I ate three pieces of cake on Sunday, Monday, and Tuesday. I think Mark ate that same amount. Talon would ask for cake and then just eat the frosting off. Seriously, it's that good. Hope you like it :)

1 cup softened butter
1/2 cup cocoa powder, sifted (I totally did Not sift!)
5 cups powdered sugar
1 teaspoon vanilla
3-4 tablespoons milk

The Miracle Washing Machine

We do a lot of laundry here at the Beech House. For only having 4 people, it amazes me how much laundry we have. All. The. Time.

Memorial Day morning our washing machine broke. It made weird noises and then stopped working, full of clothes and full of water. (My heart about stopped along with it). Mark called his parents and they came down so his dad could take a look at it. 

Done for. No revival. Dead.

I had already purchased a movie ticket for Austenland so had to leave my family to get this taken care of without me. (I had so much fun with my best friend and her family and absolutely loved the movie!!). I kind of felt bad for leaving but a little bit not at all.  I got out of the movie and found out Mark had purchased a new washing machine. I got home to a fancy new machine installed and ready to wash. It works great!!

Now for the miracle part.
#1 Mark was home so I didn't have to deal with it on my own. 
#2 Mark's parents are awesome. They came down, looked at the old machine, went to buy a new one with Mark/watched the kids while Mark bought the new one, hauled the new one home in their truck, helped instal the new one/watched the kids some more, and hauled the old one away. Awesome. 
#3 Mark had recently gotten a raise and worked a bunch of overtime so we had a little extra money. 
#4 Memorial Day sale. 
#5 There was a floor model of a door buster that Mark asked about. The salesman said that they were going to get more in so he wasn't allowed to sell the floor model. Right then a manager walked by and told the salesman that Mark could have that floor model. The salesman had turned down 7 people before the manager said Mark could have it. We saved an additional $300 because of that. 
#6 It was all taken care of in one day. 
#7 I was able to see an awesome movie with awesome people and hardly had to be involved with the whole fiasco. :)

This broken washing machine was hardly a problem and more a reminder of the Lord's mindfulness of us and the tender mercy he is continually showing us. I know that this really is an example of a miracle in my life. :)

I'm A Negative Beech

I am a complainer.  I know this about myself.  I'm especially horrible when I am tired...which is a lot. The temperature, kids, cooking, cleaning, traffic, what evs, I complain about it all.  Well, I have decided that I want to change, that I want to be better and more positive.  This week I am challenging myself to be positive and to not complain.  I'm sure that it will be difficult at first, but I'm hoping that by the end of the week, I'll be awesome...er than I already am ;)  I thought it would be fun if we all did the challenge together!! Super fun, right?!

Recipe: Tropical Quinoa Chicken Salad

This is an easy meal that uses ingredients I commonly have around the house. I invented it one day when my fridge was empty and so was my belly. Hope you like it!!


When I was working full time, I rarely used the crockpot but have been using it more frequently now that I am home. I like using the crockpot for this recipe because I can start the chicken at lunch time and then work on it during nap time. I also like to shred the chicken vs cube it because I think it works better with the quinoa. You, however, can cook and prepare your chicken however you darn well please.


I cook my quinoa in the rice cooker and use only 1.25 cups of liquid per the 1.5 cups of dry quinoa because soggy quinoa is no bueno. To sweeten the quinoa and to give it more of a tropical taste, you can substitute coconut milk for some of the water. When I have it on hand, I use about .5 cup coconut milk and .75 cup water.


When draining the pineapple and oranges, I leave the tiniest bit of juice in the can to mix in with the salad. Make sure you fold the oranges in gently after everything else is mixed in or else you will end up with mangled oranges...like mine. When I am feeling ambitious, I toast coconut flakes in the oven to sprinkle over the top (didn't happen last night).  


Yum!



Tropical Quinoa Chicken Salad

2 Cups cooked chicken, shredded
1 1/2 Cups dry quinoa, cooked
1/2 Cup coconut milk (optional)
2 Cups grapes, halved
2 Cans pineapple, drained
1/2 Cup poppyseed dressing
2 Cans mandarin oranges, drained

Possible delicious add ins:

Toasted coconut flakes
Red bell pepper, chopped
Chives, chopped
Sliced almonds

Book Review: Earth Unaware

Hello, blog followers!! I have a book review for you. :)

Earth Unaware (The First Formic War, #1)
By: Orson Scott Card and Aaron Johnston

***** 5/5 stars! I really like the Ender books and have read most of them. This series takes us back and sets the scene for the original Ender's Game book(s). We knew that there was a First Formic War and the preparation for the Second Formic War is the setting to Ender's Game, but we really didn't know much about that first war. This book allows a look into some of the technology of the time, where humans were with space travel, as well as a limited view of the mind set of the time.

I really like the characters. I like the amount of characters and how we see them through to the end. I think the characters are very three dimensional and relatable. One of my favorite scenes is between Rena and Segundo. The thoughts, love, and tenderness shared really touched me and brought to mind the relationship I have with my wonderful husband. 

I like this book and the smaller stories put together that make it up, but note that this whole book is really only a set up to the actual war. I will be reading the next installment, Earth Afire, soon and will let you know what I think.

The moment you realize that both pairs of yoga pants are in the laundry and you have to decide between putting real pants on or keeping the blinds closed. Yesterday my blinds were open, today, closed. Let's just hope I do some laundry before tomorrow. 

I have decided to really get my blog going. I wrote a few posts a few years ago, but plan on writing more frequently now.
